RECIPE: Asian Coleslaw


This is my family’s all time FAVORITE recipe! I usually make a double batch (using 2 separate

bowls), if I’m going to pull out all the ingredients anyways. I serve one of the batches as our vegetable side dish, and then have an extra batch so we can make individual servings throughout the week whenever we want it.


Tip: Make sure not to mix up the coleslaw mix with the dressing until you are ready to eat.


Asian Cole Slaw


3 scallions thinly sliced

1 bag coleslaw mix

1/2 small red onion, thinly sliced

2 Tbsp soy sauce

Juice of 1 lemon

1 Tbsp canola oil

1 Tbsp grated fresh ginger

1 Tbsp white vinegar

1 Tbsp brown sugar

1 Tsp sesame oil

1/2 Tsp salt

24 grams powdered peanut butter


Put the first 3 ingredients in a large salad bowl. In a separate small bowl, mix together the rest of the ingredients and pour over coleslaw mix and onion.
