RECIPE: Mojo Chicken Low-Fat


RECIPE: Mojo Chicken


Serves 4


1 1/2 lbs chicken breast

1/2 cup orange juice

Juice of 1 lime

3 cloves of garlic

1/4 cup cilantro

1/2 tbsp cumin

1 tsp dried oregano

1 tsp salt

1/2 tsp ground black pepper

Spray oil


Add all the ingredients (except the chicken and spray oil) to a blender, and process for 10 seconds. Put the chicken in the marinade, and marinate for at least 3 hours. Before I grill the chicken, I like to pound it out with a meat tenderizer (or you can use a roller) in the bag (I like it thin…it makes it more tender and it cooks quicker). If I’m grilling the chicken, I’ll spray some oil on them before I set them on the grill grates. This prevents sticking, since I didn’t use oil in the marinade. If you opt to use oil (make sure to count the fat) and just omit this step. Grill on medium-high, 7-8 minutes a side. Or, bake at 450F for 15-18 minutes. Internal temp should reach 165 degrees.



Pair with cilantro lime rice or black beans (if you need the carbs). Add sliced avocado (if you need the fat). I’m only accounting for half the macros in my marinade, since I’ll end up throwing out whats not absorbed by the meat. If you want to reserve the remaining marinade to use later, just boil it for at least one minute, and then drizzle on the finished chicken. (Just be sure to double the carbs if you end up using all the marinade)!
